Student Savers: 3 items I ALWAYS have in my fridge + 10 new meals
1. Eggs
Fast, nutritious, high in protein. PLUS, cholesterol fears have been proven false.
Ready to be EGGIFIED?
- Boiled Eggs: Boil them - Eat them as it is (2x)
- Egg Mayo: Boil 2x Eggs - Mash with a fork - + 1 tbsp Mayo/Mustard + Black Pepper + Chili Flakes (Have it w/ toast for a balanced meal!)
- Scrambled eggs: I like mine done with a sprinkle of cheese, diced tomatoes, portobellos, onions, and a dash of italian herbs + freshly cracked pepper
- Sunny side up: With rice <3 UMMM YUM :)
2. Canned Tuna in Water
Cheap, fast, PROTEIN KA POW-WOW.
Sometimes, I just don’t have time to watch a chicken defrost from the ice age in my freezer. Sometimes, I just need to eat… NOW. So canned tuna is my go to when I’m being a little impatient bunny. I’m sure you have your impatient bunny days ;)
Some good tuna kapow-wow ideas:
- Sir Tuna Mayo-r: Rinse the tuna in the can to wash off any residual salt. Add either mayo or mustard, a healthier alternative. Diced Onions, Dash of dill + Cracked pepper + Chili flakes (Have it with toast and melted cheese on top for a full meal!)
- Tuna pasta: OH I LOVE. Sauteed your tuna with cracked pepper, cajun spices (I love curry powder as well!), and diced garlic if you want). Add in boiled pasta. Have it with Olive Oil and Chili Flakes (Aglio Olio), or with your favorite Tomato/Creme/Pesto sauces. Add in some brocoli, carrots for some bunny veggie loving!
- OHAIYO TUNA: No cook japanese inspired dish of mine. Can of tuna. Empty into a bowl. Add in teriyaki sauce, chili flakes. Top it off with lil seaweed bits.
3. Yoghurt
It’s yummy, it’s cheap, quick, and it’s nutrition-packed. For the days when you have NO time to make a sandwich before you dash off to school, grab a yoghurt and side of fruit and bag of nuts/granola and you’re SET.
Other sweet things I do to my yoghurt:
- Apple Pie + Ice Cream: Dice apples + Sauteed in a pan together w/ a spray of PAM or butter (have you been a good girl?) + copious amounts of cinnamon. Top off w/ cold, plain yoghurt (greek or normal)
- Will You Berry Me? Blueberries + Raspberries + Other berries on sale (Because berries are so expensive here, and I CANT BE A CHOOSER… plus all berries are magical >;D). » Take out your pan, and HEAT UP YOUR BERRIES, and melt them into a blueberry confit. Top the berrylicious heated jam on your cold yoghurt + sprinkle some granola or shaved dark chocolate <3
- YoGHURT to be kidding me: Did you know. Yoghurt tastes great as a substitute for anything that should resemble cream? YES. No kidding. I stir it in (plain, no sugar free yoghurt) to canned tuna, to boiled diced potatoes for a quick potato salad (same with pasta salads)… it’s REALLY YUM. <3 & kinda smart too… no?
